RED VELVET PANCAKES

Oh. my. god. I can’t brag enough about these pancakes, they are absolutely delicious!!! Anyone that knows me, knows my fave type of cake is Red Velvet and when I came across the same flavour pancakes I just had to give it a go!

I had to have pancake day yesterday because my boyfriend is working tonight – at least I was still able to have it though! He made up the mixture from the usual basic recipe of eggs, flour and milk – you can find a simple recipe online, the BBC have an easy one to follow here.

So once you have your basic mixture made, take some of it out – unless you want all of your pancakes Red Velvet of course, but I just wanted one as I like to have a range of different fillings when I eat mine… So greedy aren’t I! I started off my fat evening with savoury cheese and ham pancakes as well as moving on to sweet! You have to have both, like you just have to!
So anyway back to Red Velvet… I added a splash of vanilla essence, some luxury hot chocolate powder from Whittards but you can add in cocoa powder or another brand of hot choc and then some red food colouring. And that’s basically it! Then you just pour the mixture onto the pan, fry for a few mins either side and voila. Try to even out how long you leave the pancake for on either side as if it cooks too much the pancake will go brown and lose it’s redness. I found mine did this with 1 side, so when I rolled my pancake I made sure the good, red side was on show 😉

With the filling, I spread strawberry jam, squirty cream and rolled it up and ate it with strawberries on the side. It was absolutely relish. Jam and squirty cream in pancakes has always been my ultimate fave. But I mean, experiment! I’m sure Nutella would taste yummy too!
